法式香草烤布蕾✿《鷹牌煉奶》

蛋黃4顆
鮮奶200克
動物性鮮奶油130克
鷹牌煉奶50克
細砂糖40克
天然香草精1/2茶匙
烤焦糖
細砂糖適量

1 準備食材

2 將蛋黃加進全蛋裡面,輕輕的用打蛋器打均勻

3 準備一鍋,將鮮奶,鮮奶油,煉奶,細砂糖,和香草精通通加進去

4 開小火煮,糖溶化攪拌均勻,(不用煮滾,手摸有熱就關火)

5 慢慢倒進打好的蛋液裡,邊倒邊攪拌均勻

6 用濾網過濾兩次

7 將布丁液倒入烤皿裡8分滿

8 蓋上鋁箔紙,烤盤裡面倒入熱水1公分高,烤箱預熱160度C,烤35-40分鐘,烤好拿出來,冷卻後放冰箱冰

9 冰好的布蕾拿出來,撒上少許細砂糖在布蕾上

10 用噴槍將糖烤成焦黃色
